4 Recipes Biscuit Flour

There are those who call it biscuit from wind or flying cookie, but the name because it is the most well-known is the same cookie flour.

Very much appreciated in Brazil, the biscuit flour is one of the traditional dishes of brazilian cuisine, more specifically the region of Minas Gerais and the Center-West.

The preparation account, with very few ingredients, being the central one – as the name indicates – the flour sour.

Don’t know for sure the exact origins of the recipe of biscuit flour, but it is known that the tapioca tart was an ingredient that was inherited from the indians, and that this recipe is prepared for a long time and that already in the EIGHTEENTH century the biscuit flour was prepared and served on the farms of Minas Gerais, in Brazil.

Traditionally the biscuit flour is prepared with tapioca flour sour, but currently there are already several variations of the recipe. And we left you some.

RECIPES BISCUIT FLOUR

1. BISCUIT FLOUR – SIMPLE RECIPE

Nothing like starting with the most simple recipe. On the website Kozinharte find a recipe.

– Ingredients –

  • 5 eggs
  • ½ Kg flour sour
  • 200 ml of boiling water
  • 150 ml of oil at room temperature
  • Salt q. b.

– Mode of preparation –

  1. In a cup add the tapioca flour, boiling water, salt and oil and mix well.
  2. Then add the whole eggs one at a time, until you get a consistency a little dense.
  3. When the dough is the desired consistency, place it in a bag of pastry (or a plastic bag with the tip cut off) and form the biscuits (you can create sticks, rings, donuts, or peanuts), directly on the board – no need for greasing the pan, taking care to leave a space between each biscuit to prevent sticking when cooking.
  4. Bake in the oven, pre-heated for about 15 to 20 minutes, until they are douradinhos. And are ready to serve.

2. BISCUIT TAPIOCA WITH CHIA SEEDS

A perfect version for those who want to take advantage of the benefits of chia seeds that can be found on the blog Beautiful Gil.

– Ingredients –

  • 250g flour sour
  • 1 egg
  • 120ml corn oil or soybean oil organic
  • 200ml of cold water
  • 1 c. tea sea salt
  • 2 c. of the soup of the seed of the chia

– Mode of preparation –

  1. Boil 150ml of water and then put the oil and add (slowly) the flour sour, chia seeds and salt and mix well.
  2. With the dough still hot, add the egg and beat until the mass obtains a consistency point type “frosting”, adding the remaining 50ml of cold water to the few.
  3. Place the dough in a bag of pastry and make the biscuits on the tray to go in the oven.
  4. Bake in the oven pre-heated to 200ºC for 15 and 20 minutes.
  5. When you are ready to remove and, if you want you can book in vials or bags, well closed to avoid that has begun to sweep.

3. BISCUIT FLOUR IN THE THERMOMIX

The recipe is from the site the World of Recipes Thermomix.

– Ingredients –

  • 250g flour sour
  • 100g of oil
  • 70g milk
  • 5g of vinegar
  • 5g salt
  • 100g of boiling water
  • 1 egg (size M)

– Mode of preparation –

  1. In the cup the Thermomix place the milk, the oil, the salt, the vinegar and the flour and set 10 seconds, speed 4.
  2. After you add the hot water and set 10 seconds, speed 3.
  3. Then turn on 1 minute, at the speed the Shank with the lid closed the work and put the egg by the cover.
  4. Finally, place the dough in a bag of pastry, and roll out the dough on a baking tray greased with butter, creating shapes to taste.
  5. Bake in a medium oven pre-heated for about 20 minutes, until the biscuits are well dried and lightly browned.

4. BISCUIT TAPIOCA WITH CHEESE

A recipe that will appeal to lovers of cheese. The suggestion is to blog Chef Cris Milk.

– Ingredients –

  • 500 g of flour sour
  • 120 ml of water
  • 120 ml of canola oil
  • 120 ml whole milk
  • 2g of refined salt
  • 100g Parmesan cheese, grated
  • 1 egg
  • Unsalted butter (for greasing the tray) q. b.

– Mode of preparation –

  1. Start by moistening the tapioca sour with the water at room temperature.
  2. The part mix the milk, oil and salt and heat until boiling.
  3. Then, add the flour to the milk mixture while still hot, beat the dough until cool and set aside.
  4. Then, beat the eggs and add to the batter until you get the consistency of mole.
  5. Add the grated cheese and mix well.
  6. Place the dough in a bag of pastry and distribute on the baking tray previously greased.
  7. Pre-heat the oven to 180ºC, for 5 minutes and then take the tray with the biscuits in the oven for 7 to 10 minutes, reducing the temperature to 90ºC.
  8. When you are ready, turn off and leave in oven until cooled.
